Spicy Marinated Butter Beans

You can marinate many different kinds of beans, but the ones that work best are mild, white beans. Big varieties like butter or gigante beans are extra creamy which taste delicious in the vinegary marinade. Serve this easy, no-cook recipe as part of an appetizer spread or snack plate, or add to a salad or grain bowl.

Serves 6

Drain and rinse 2 cans butter beans. Add to a large bowl with 2 Tb olive oil, 2 Tb white wine vinegar, ¼ cup chopped scallions, ½ cup finely chopped bell pepper, 2 minced garlic cloves and 1 tsp red pepper flakes. Season with salt and pepper to taste. Allow beans to marinate in the fridge for a couple of hours before serving.
