Spicy Sweet Potato Noodles

Pair sweet potato with spicy, pungent flavors from chili powder and garlic for an unexpected yet delicious dish. Chili powder is made with a variety of chili peppers and sometimes spices and herbs like cumin, oregano, coriander and garlic. Serve these veggie noodles with a lean protein like chicken, shrimp or tofu.

Serves 4

Peel 2 medium sweet potatoes. Using a spiralizer, make noodles from the sweet potatoes. In a large pan over medium heat, add 1 Tb olive oil and ½ cup sliced yellow onion (about ½ medium onion). Cook until the onion slices are translucent. Add 2 minced or pressed garlic cloves. Cook until the garlic starts to brown. Add the sweet potato noodles, 1 Tb olive oil, 1 Tb chili powder and the juice of 1 lime. Stir well and cover. Cook until the sweet potato noodles are soft, about 15-20 minutes. Serve with 2 Tb chopped cilantro.
