Embrace Sustainability

Sustainability is one of our core values at Great Performances. From back of house to front of house, we consider how our actions contribute to the health and wellbeing of our planet.

Through our sourcing practices, we endeavor to order as much as possible through our local partners to help reduce our carbon footprint and to support our communities. We own an organic farm, Katchkie Farm, in upstate New York that serves as a source of inspiration and ingredients for our chefs and we invite our clients, employees, and friends to participate in our farm’s CSA. We also source produce and food ingredients from several other local farms including Samascott Orchards, Hepworth Farms, and Wild Hive Farms.

We work to reduce food waste from sourcing to cooking and at events. Through decades of experience, we’ve become masters at quantifying food orders and ensuring we have minimal leftovers. We’ve developed a rich and delicious vegan demi-glace that takes advantage of any vegetable peels and scraps. While adhering to legal and food safety standards, leftover food following an event is collected by food rescue teams for distribution, and we commonly gather leftover food from many of our venues and donate it to the Mott Haven Community Fridge in the Bronx. , and we partner with Too Good To Go at our café in the Bronx, Mae Mae Café.

Our packaging is carefully selected to meet our own high sustainability standards. We’re partnered with Sabert, one of the industry leaders in developing eco-friendly and sustainable packaging. Our most commonly utilized containers are the Sabert "BePulp" trays and "PP" Lids. Both components are made from renewable, recyclable, and compostable plant-based sources. Our cups and lids are made in the USA by Ecotainer using renewable, plant-based sources that are commercially compostable. The utensils are made from "PLA", a plastic-like material made from corn and other plant-based components. Much like our other items, PLA is renewable, recyclable, and compostable as well.
