Mustard Greens Salad

Mustard greens are a leafy green that tastes peppery and slightly bitter. They are often sautéed or added to soups and stews, but they can also be enjoyed raw in a salad. 

Serves 2
Rinse 1 bunch mustard greens and 2 cups assorted greens (frisée, spinach, baby lettuce). Tear the mustard green leaves from the stems and roughly chop the leaves. Add all greens to a large bowl. In a separate jar, add 2 Tb olive oil, 2 Tb apple cider vinegar, 1 Tb tahini, 1 tsp maple syrup and salt and pepper. Shake until combined. Drizzle over the greens and massage well. Sprinkle 2 Tb sunflower seeds over top.
