Brown Basmati Rice with Coconut
Basmati rice is an aromatic, long-grain rice native to India and Pakistan. When cooked properly, the grains become fluffy and do not clump together. Compared to white basmati rice, brown basmati rice is an intact whole grain that provides more fiber and nutrients. Preparing brown basmati rice with coconut milk results in a creamy side dish that pairs well with strong flavors including ginger, turmeric, cinnamon, curry powder and other spices.
Serves 6
Rinse 1 cup brown basmati rice. Add rice to a saucepot with ½ cup canned full-fat coconut milk, 1-1/2 cups water and a pinch of salt. Bring to a boil then reduce heat to low and cover. Cook until the coconut milk and water is absorbed, about 40 minutes. Remove from heat and keep the cover on for an additional 15 minutes. Fluff with a fork. Garnish with ¼ cup unsweetened coconut flakes before serving.
